Thrift Meister's
Italian Casserole
1 pound ground beef (may use slightly
less)
6 pepperoni slices quartered
1 14 oz can diced tomatoes
1 28 oz. jar of pasta sauce
1 cup Rotini pasta
8 oz frozen Broccoli, Red Peppers, Onions, Mushrooms (half a bag)
8 oz Mozzarella shredded cheese
Preheat oven to 350 degrees. Brown and drain ground
beef. Boil rotini according to directions. Then combine ground beef,
rotini, pepperoni, diced tomatoes, pasta sauce, and vegetables in 13
x 9 inch casserole dish, and mix well. Cover with mozzarella cheese.
Bake 25 minutes or until bubbly and remainder of and put back in oven
till it melts. Depending on height of casserole dish you may need to
not add quite all of the pasta sauce--better to leave room for it to
bubble up and stay in the dish than to bubble over and make a mess.
