Thrift Meister's Italian Casserole

1 pound ground beef (may use slightly less)
6 pepperoni slices quartered
1 14 oz can diced tomatoes
1 28 oz. jar of pasta sauce
1 cup Rotini pasta
8 oz frozen Broccoli, Red Peppers, Onions, Mushrooms (half a bag)
8 oz Mozzarella shredded cheese

Preheat oven to 350 degrees. Brown and drain ground beef. Boil rotini according to directions. Then combine ground beef, rotini, pepperoni, diced tomatoes, pasta sauce, and vegetables in 13 x 9 inch casserole dish, and mix well. Cover with mozzarella cheese. Bake 25 minutes or until bubbly and remainder of and put back in oven till it melts. Depending on height of casserole dish you may need to not add quite all of the pasta sauce--better to leave room for it to bubble up and stay in the dish than to bubble over and make a mess.

There variations on the Hershey Bar Swirl Cake out there and it is not a TM original. The TM likes it made with honey and it lends itself to all manner of glazes. Put it in the microwave to warm it up and even add a little Hershey syrup to top it off.


Hershey Bar Swirl Cake

Yield: About 12 servings

Butter and flour for preparing pan

1 cup butter or margarine

2 cups sugar

1 teaspoon vanilla

5 eggs

2 1/2 cups unsifted all-purpose flour

3/4 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups sour cream

1/4 cup honey OR light corn syrup

3/4 cup chopped pecans

1 (8-ounce) Hershey's milk chocolate bar

1/2 cup Hershey's chocolate-flavored syrup

Procedure:

1. Grease and flour 10-inch tube pan. Adjust oven rack to lowest position. Preheat oven to 350 degrees.

2. Cream butter or margarine, sugar and vanilla until fluffy; add eggs. Beat well. In separate bowl, combine flour, baking soda and salt. Add dry mixture to butter mixture alternately with sour cream.

3. Separate out 2 cups of batter; stir in honey and pecans. Set aside.

4. Melt candy in chocolate syrup over warm water in top of double-boiler; blend into remaining batter.

5. Pour batter into prepared pan; spoon reserved mixture over batter.

6. Bake 45 minutes. Decrease temperature to 325 degrees; bake 50- 55 minutes more. Cool cake 1 hour before removing from pan. Cool completely before serving.

The Thrift Meister can't take credit for the maple syrup chicken recipe either, but don't let that stop you from trying it. The maple syrup smell floating though the house when this is basting has to be one of the best ever cooking smells.

Maple Syrup Chicken


Ingredients
1 whole chicken, about 3-1/2 pounds
1/2 tsp lemon rind
2 tsp lemon juice
1/4 cup margarine melted
1/2 cup maple syrup
Salt to taste
1/4 cup chopped onion


Instructions
Place cut up chicken in baking pan. Mix all remaining ingredients and
pour over chicken. Bake uncovered 50 to 60 minutes at 400 degrees F.
until done (test with instant-read thermometer). Baste frequently.

Yield: 4 servings
